Basada en metodología científica, la auditoría evalúa la calidad del ganado, de las canales y de la carne en el Uruguay. La sistemática repetición de este trabajo cada cinco años permite visualizar la evolución de los diferentes aspectos relevados en auditorías anteriores, la detección de nuevos defectos de calidad y la definición de nuevas alternativas para mejorarlos. |
